The History Of Sushi

Sushi’s story stretches back more than a thousand years, beginning with its origins in Southeast Asia. The earliest version, known as narezushi, involved fermenting fish with rice to preserve it. Interestingly, the rice was discarded after fermentation, and only the fish was consumed. This practice made its way to Japan in the 8th century and gradually evolved. By the Edo period (17th to 19th century), sushi as we know it began to take shape. Edomae-zushi, using fresh fish and vinegared rice, introduced a quicker and more refined method of preparation. This style, born in Edo (now Tokyo), quickly became a local favorite.

By the 19th century, nigiri sushi gained popularity. This simple yet delicious combination of raw fish and vinegared rice soon captured the hearts of diners. With the rise of global travel and cultural exchange, sushi moved beyond Japan’s borders, evolving into the beloved international cuisine we enjoy today.
