By the Edo period (17th to 19th century), sushi as we know it began to take shape. Edomae-zushi, using fresh fish and vinegared rice, introduced a quicker and more refined method of preparation. This style, born in Edo (now Tokyo), quickly became a local favorite.
By the 19th century, nigiri sushi gained popularity. This simple yet delicious combination of raw fish and vinegared rice soon captured the hearts of diners. With the rise of global travel and cultural exchange, sushi moved beyond Japan’s borders, evolving into the beloved international cuisine we enjoy today.
